Pairing his eye for the extraordinary with his years of practical experience as a chef and food stylist, Eeshaan draws on diverse creative interests to deepen the experience of eating, and to ensure that memory-making is a big part of dining. For example, a collaboration with an art gallery included a multicourse menu inspired by the food memories of the exhibition’s artists, as well as their preferred color palettes. Another notable gathering was inspired by fragrance where an apothecary was created and cocktails were designed taking inspiration from the notes of the perfume, such as the scent of wet sand and leather, were translated into a terracotta aged cocktail to give it earthiness and minerality from the clay.
